For about the last month or two I have been completely obsessed with salads.
They have been my go-to dinner and lunch meals because they are SO easy to throw together and they taste amazing. I’ve been switching between two different types. The first, my version of a Southwest Chipotle Chicken Salad and the second, a salad that Jenny threw together one night. I call it the Raspberry and Walnut Chicken Salad.
I actually am kinda of obsessed with the Raspberry and Walnut Chicken salad and have decided to share the super easy recipe with all of you lovelies.
Here’s what you’ll need:
Choice of lettuce (I use a Garden mix)
Feta Cheese (I would probably not put feta in the salad again…it kinda over powered it for my taste.)
Tomatoes (not pictured cuz I forgot to put them in the picture)
Raspberry Vinaigrette (My fav is the Panera version but you can but you can use any brand)
The rest is as easy as throwing all the ingratiates into a bowl. I like to layer all the extras on top of the lettuce and them toss it with the dressing before I eat it.
First layer: Lettuce and Chicken
Second Layer: Red onion, Craisins, and walnuts and feta cheese
Third layer: Tomatoes. My personal favorites are the Cherubs. Holy moly….I can eat these little babies like candy. Delicious.
Fourth Layer: Croutons and Raspberry dressing.
TOSS AND ENJOY!
I never measure any of the ingredients. I just eye ball it based on how hungry I am. This salad is great a main course or could be served as an appetizer. This one I made could have fed two people but I may or may have eaten the whole thing myself. (Read: I did eat the whole thing myself and I’m not ashamed in the least.)
The other thing I love about this salad is how colorful it is! It’s almost too pretty to eat…..almost.
